Serves 6
Ingredients:
1 lb. Pappardelle's Lime Cilantro Pasta
3 TBSP olive oil
2 cloves garlic, minced
1/2 cup frozen orange juice concentrate
1 cup water
1/2 cup lemon juice
2 TBSP Dijon mustard
2 TSP tomato paste
1 TBSP soy sauce
1 TBSP fresh ginger root, finely minced
1 lb. boneless, skinless chicken breast
1 bunch fresh cilantro, chopped
Steps:
1. Combine olive oil, garlic, orange juice concentrate, water, lemon juice, mustard, tomato paste, soy sauce & ginger in a bowl. Mix thoroughly.
2. Pug chicken in a plastic Ziploc freezer bag. Add half of the orange juice mixture, refrigerate & marinate for 30-60 minutes.
3. Grill or broil chicken on both sides until cooked through, but moist. Slice into bite-sized pieces & reserve.
4. Heat remaining orange juice mixture in a small saucepan & simmer for 5 minutes.
5. Meanwhile, cook pasta in 6-8 quarts of rapidly boiling salted water until al dente (about 5-8 minutes). Drain & transfer to heated pasta bowl.
6. Add cilantro to pasta & toss thoroughly. Add the heated sauce & toss again. Add the chicken & toss one final time. Serve immediately.

1/2 cup milk
2 TBSP instant coffee powder
3oz/75g vanilla ice cream
1 banana, sliced & frozen
Steps:
1. Pour the milk into a food processor or blender, then add the coffee powder & process gently until combined. Add half of the vanilla ice cream & process gently, then add remaining ice cream & process until well combined.
2. When the mixture is thoroughly blended, add the banana & process until smooth.
3. Pour the mixture into a glass & serve.

1/3 cup milk
1 TBSP maple syrup
7oz/200g vanilla ice cream
1/2 TBSP almond extract
Decoration:
Chopped almonds
Steps:
1. Pour the milk & maple syrup into a food processor or blender & process gently until combined.
2. Add the ice cream & almond extract & process until smooth.
3. Pour the mixture into a glass, scatter the chopped nuts over the shake & serve.

1 large ripe Anjou pear
Scant 1/2 cup frozen raspberries
Generous 1/2 cup ice-cold water
Honey, to taste
Decoration:
Raspberries on a cocktail stick
Steps:
1. Peel the pear & cut into fourths, removing the core. Put into a food processor or blender with the raspberries & water & process until smooth.
2. Taste & sweeten with honey if the raspberries are a little sharp.
3. Pour into a glass & decorate with whole raspberries on a cocitail stick & serve.

1 TBSP plain yogurt
1/2 TBSP maple syrup
1/4 peeled & sliced banana
1/4 stoned, peeled & chopped peach
1 1/2 hulled strawberries

1/2 cup canned peach slices, drained
3 ice cubes, crushed

2. Add the peach slices & ice cubes & process until smooth. Pour the mixture into a glass & decorate with strips of orange peel.

1 1/2 cups frozen forest fruits (such as blueberries, raspberries & blackberries)
Decoration:
A slice of fresh orange
Steps:
1. Pour the orange juice into a food processor or blender. Add the banana & half of the forest fruits & process until smooth.
2. Add the remaining forest fruits & process until smooth. Pour the mixture into a tall glass & decorate the rim with a slice of fresh orange.
3. Add a straw & serve.

Ingredients:
1/6 cup raspberries
1/4 cup strawberries, halved
1/2 cup plain yogurt
1/2 cup milk
1/2 TSP almond extract (optional)
1-1 1/2 TBSP honey, to taste
Steps:
1. Press the raspberries through a nylon strainer into a bowl using the back of a spoon. Discard the seeds in the strainer.
2. Put the raspberry puree, strawberries, yogurt, milk & almond extract, if using, into a food processor or blender & process until smooth & combined.
3. Pour the smoothie into a chilled glasses, stir in honey to taste & serve.
